In this article we give you two different recipes: a sugar-free coffee cake with blueberries and yogurt and a coffee and chocolate cake without eggs or milk, perfect for vegans. You should definitely try them!

Coffee cake with blueberries and yogurt

This recipe is perfect for young children because although it contains no sugar, it has a very pleasant, sweet taste. It also has a very juicy texture and resembles traditional brownies or chocolate cake. Let’s take a look at the recipe.

Ingredients

  • 200 grams whole wheat flour (1 cup)
  • 4 eggs
  • 200 ml Greek yogurt
  • 30 grams defatted cocoa powder (2 tablespoons)
  • 1 sachet baking powder
  • 80 ml sunflower oil
  • Stevia
  • 100 grams blueberries
  • 125 ml coffee (1/2 cup)
  • Ground cinnamon (to taste)

Replacements

  • You can replace the wheat flour with flour from another grain (spelt, rye, oatmeal). It is better if you use a little bit of wheat flour, even if you want to add a different kind, so that the cake has a fluffier and softer texture.
  • You can replace the sunflower oil with coconut oil, butter or margarine. We do not recommend using olive oil to make these types of desserts as it can be too strong and mask the taste of the cake.
  • You can use any sweetener instead of sugar: stevia, agave syrup, saccharin, liquid sweetener, etc.
  • Finally, if someone who eats it is lactose intolerant, you can replace the Greek yogurt with soy or almond yogurt.

Preparation

  • Preheat the oven to 190ÂșC before you start.
  • Place the eggs in a bowl and beat them until they have a foamy texture.
  • Then add the sweetener and the previously melted oil or butter and stir until all ingredients are blended.
  • Then add the flour with the yeast using a sieve to prevent lumps from forming.
  • Mix with a spoon until you get a homogeneous texture.
  • Then add the cocoa powder and the coffee made in a coffee machine or 150 ml of water with 4 tablespoons of instant coffee.
  • Wash and clean the blueberries, pit them and then add them to the mixture.
  • Then grease an ovenproof dish and pour the mixture into it.
  • Finally bake for 30-40 minutes and let it cool on a wire rack for a few hours so it doesn’t lose its shape or texture.
  • It is important that you do not open the oven while the cake is rising, as this can cause it to lose air and become uneven.

To know if the cake is fully cooked, poke a skewer or toothpick in the center and see if it comes out dry. If not, return to the oven for another 5 minutes and continue baking until fully cooked.

This recipe is delicious with vanilla ice cream or whipped cream. If you want a healthier version, you can add nuts or fruit salad to complete the dessert.

Vegan coffee cake with cocoa and blueberries

If you prefer a 100% vegan alternative to sugar-free coffee cake, keep an eye out for the following recipe. In addition to the ingredients mentioned , you can add a little cocoa for a more intense taste.

  • 200 grams flour (1 cup)
  • 70 grams defatted cocoa powder
  • 5 grams baking soda (1 teaspoon)
  • 200 ml coffee (brewed in water) (1 glass)
  • 150 grams agave syrup or liquid sweetener of your choice
  • 100 ml sunflower or coconut oil
  • 75 grams of blueberries
  • ground cinnamon
  • Vanilla extract

Preparation

Vegan Chocolate Coffee Cake
  • First preheat the oven to 190 C.
  • Then brew the coffee with water and instant coffee or put it in a coffee maker.
  • Add all the liquid ingredients to a bowl: the agave syrup, sunflower oil, coffee and vanilla extract (optional).
  • Then sift the flour and add it together with the baking soda or yeast and the defatted cocoa powder.
  • Beat vigorously until all ingredients are perfectly mixed and you get a homogeneous mixture.
  • Then taste the dough and add more syrup or cinnamon if you think it’s necessary.
  • Then wash the blueberries, pit them and add them to the mixture.
  • Pour the mixture into a pre-greased and floured tin.
  • Bake for about 30-40 minutes, depending on the height of the dough and the size of the pan.
  • Finally, take it out and let it cool before serving.
